Fresh Basil & Rocket Pesto

30g Fresh Basil, 80g Fresh Rocket, 100g Roasted Cashews, 2 Cloves Garlic, About 80ml Olive Oil, Salt & Pepper.

Blend everything together in an electric machine until smooth(ish) (about a min) & Hey Pesto!

Vanilla lemon cupcake with honey cream cheese frosting

To make it:

1 batch standard cake batter with 1 tsp vanilla essence and a good squeeze of lemon and some zest.

For the frosting:

cream together half a tub of creamed cheese, 1 table spoon of butter, 1 table spoon of honey and half a cup of icing sugar. Blob on top and sprinkle a little lemon zest on top
